Julien Dumas is a head chef of
French One-Michelin-Starred restaurant, Lucas Carton.
The talented Julien Dumas gives new
life to the legendary Lucas Carton in the 8th arrondissement of Paris. A
kitchen with many faces, men, the product, the wine; passion and drive for a
common purpose: the food and wine pairing that is thought ideal.
Mr. Dumas was the chef at Domaine
des Andéols, Alain Ducasse’s inn at Saint-Saturnin-lès-Apt in the Vaucluse,
which he left in 2009 for Le Rech in Paris, where he won over a discriminating
clientele. Then he went to Quebec and joined the restaurant Panache at the
Auberge Saint Antoine, Relais & Châteaux, before returning to Paris in
November 2013 to embark on the Lucas Carton adventure.
He is the very one who helped Lucas
Carton regain a Michelin Star after the rejuvenation.
