He runs a restaurant, Astrance, which is located in Paris. It has a seating capacity of 25, and reservation is required six months in advance. It presents creative Asian French cuisine. It opened in 2000 and received one Michelin star the following year, and won three stars in 2007. Since the age of 7, Pascal Barbot has dreamed of becoming a chef, and since the age of 17, he has been trained in top restaurants in European countries and Australia. Without a fixed menu, they serve improvised dishes according to the day's inspiration with fresh ingredients. They do not use dairy products such as cream and butter. Being greatly influenced by Korean ingredients, he has recently been creating new dishes with Korean sauces and fermented foods.
